Azur refers to the sea, the Mediterranean. Each region along the Mediterranean coast has its own identity. At the same time, the customs and practices of the different peoples have cross-fertilized over the centuries. In Azur, chef Joel Åhlin takes a personal taste journey to discover both the local specialties and the common denominators that bind Southern Europe, the Middle East and North Africa. Joel Åhlin opened the acclaimed Bar Agrikultur and Restaurant Agrikultur together with his colleague Filip Fastén in 2015 and is also the co-founder of the vegetarian street food restaurant Fafalle. He has also published the book Köttfärssås together with Jason Diakité and Harald Wachtmeister.
